Bibimgooksoo or Korean mixed noodles are cool, spicy, slightly sweet, and so addicting to eat!
Making bibimgooksoo you’d need thin wheat noodles called somyun (소면) and you cook it like pasta except the cooking time is halfed and once the noodles are flexible and soft you need to rinse the noodles under cool running water.
For the sauce you’d need 1-2 spoon fulls of Korean red pepper paste, 2-3 minced garlic cloves, a dash of sugar, a sprinkle of sesame oil, and a bit of apple vinegar (I personally love vinegar and drown my noodles…) . Preference and the portion size should be a consideration when your making your sauce!~
For the topping julienne cut cucumbers, sliced kimchi, a half cut boiled egg (a boiled egg is a garnish found in Korean cold noodle dishes like Nangmyun) and on the very top sesame seeds. To make the dish vegetarian do skip the egg ^-^
